Ingredients
* 4 bone-in short ribs
* 2 large yellow onions, sliced
* 1 cup of chopped carrots
* 4 cloves garlic, minced
* 2 sprigs thyme
* 1 bay leaf
* 4 cups beef broth
* 2 tablespoons tamari
* 1 cup Gruyère cheese, shredded
* 8 slices French bread
Instructions
1. Heat oil in a large pot and brown short ribs on all sides.
2. Remove ribs and caramelize onions and carrots in the same pot.
3. Add garlic and cook for a few more minutes.
4. Return ribs, adding broth and herbs.
5. Simmer for 2-3 hours until tender.
6. Toast bread, top with cheese, and broil until bubbly.
7. Serve soup with cheesy bread on top.
