* 1 lb smoked turkey sausage, sliced
* 1 medium onion, diced
* 3 cloves garlic, minced
* 1 bell pepper, chopped
* 4 cups chicken broth
* 1 can diced tomatoes, undrained
* 12 oz penne or rigatoni pasta
* 1 cup heavy cream
* Salt and pepper to taste
* Fresh parsley or basil for garnish
Instructions
1. Heat a large pot over medium heat with a splash of olive oil and add the sliced smoked turkey sausage. Sauté until browned.
2. Add the diced onions, minced garlic, and chopped bell pepper, stirring occasionally until softened.
3. Pour in the chicken broth and canned diced tomatoes, bringing the mixture to a simmer.
4. Add the pasta, ensuring it is mostly submerged in the liquid, and stir well.
5. Cook for about 10-12 minutes, or according to pasta package directions, until tender.
6. Lower the heat and stir in the cream, cooking for another 2-3 minutes.
7. Garnish with fresh herbs before serving.
