Ingredients
* 12 ounces fettuccine
* 2 leeks, cleaned and sliced
* 8 ounces oyster mushrooms, cleaned and sliced
* 2 tablespoons olive oil
* 1 tablespoon butter
* 1/2 cup vegetable broth
* Salt and pepper to taste
* Freshly grated cheese for finishing
Instructions
1. Cook fettuccine in salted boiling water until al dente, reserving some pasta water.
2. Sauté leeks in olive oil and butter until caramelized.
3. Cook oyster mushrooms until browned and add them to the leeks.
4. Combine cooked fettuccine, leeks, mushrooms, and vegetable broth, mixing until creamy.
5. Serve with freshly grated cheese and enjoy your delicious meal!
