Ingredients
* 2 lbs beef (chuck roast or stew meat)
* 4 carrots, diced
* 3 celery stalks, diced
* 1 large onion, chopped
* 4 Yukon Gold potatoes, sliced
* 4 cups beef broth
* 2 tbsp Worcestershire sauce
* 1 tsp dried thyme
* Salt and pepper, to taste
* Fresh parsley for garnish
Instructions
1. Cut beef into 1-inch cubes and season.
2. Brown beef in a pot and set aside.
3. Sauté carrots, celery, and onion in the same pot.
4. Add beef back and pour in broth and Worcestershire sauce.
5. Simmer on low heat for at least 1.5 hours.
6. Layer prepped potatoes on top and continue cooking until tender.
7. Garnish with parsley and serve hot.
