Ingredients
* 2-3 pounds chicken (breasts or thighs)
* 1.5 pounds baby potatoes
* 6-8 cloves garlic (minced)
* 1 cup grated Parmesan cheese
* 2-3 tablespoons olive oil
* 1 cup low-sodium chicken broth
* Salt and pepper to taste
* Fresh parsley for garnish
Instructions
1. Season the chicken with salt, pepper, and minced garlic.
2. Wash and halve the baby potatoes.
3. Layer the chicken and potatoes in the crockpot, starting with chicken.
4. Pour chicken broth on top and sprinkle half the Parmesan.
5. Cook on high for 3-4 hours or low for 6-7 hours.
