Ingredients
* 1 lb. ground beef
* 1 diced onion
* 2 minced garlic cloves
* ¼ cup flour
* ¼ cup butter
* 4 cups beef broth
* 2-3 medium diced potatoes
* 1 tsp thyme
* 1 bay leaf
* Salt and pepper to taste
* 2 cups shredded cheddar cheese
* Sour cream (for serving)
* Chopped green onions (for garnish)
Instructions
1. Sauté ground beef in a pot over medium heat until browned.
2. Add diced onion and minced garlic, cooking until softened.
3. Sprinkle in flour and butter to make the roux.
4. Pour in beef broth and add diced potatoes.
5. Season with thyme, a bay leaf, salt, and pepper; simmer for 30-45 minutes.
6. Once tender, remove from heat and stir in shredded cheddar cheese until melted.
7. Serve hot with a dollop of sour cream and sprinkle with green onions.
