* 2 boneless, skinless chicken breasts

Instructions
1. Start by seasoning your chicken breasts with fajita seasoning and set them aside.
2. In a large pot, heat some oil and sauté diced onions and bell peppers until they soften.
3. Add the seasoned chicken to the pot along with diced tomatoes, green chilies, and chicken broth. Allow everything to simmer.
4. Once the chicken is cooked through (about 15-20 minutes), remove it from the pot and shred it using two forks.
5. Return the shredded chicken to the pot, and stir in cream cheese, letting it melt to achieve that rich, creamy texture.
6. Finish with fresh cilantro and additional fajita seasoning to taste. Serve hot and enjoy!
