- 12 hard-boiled eggs (cooked on the stovetop or Instant Pot)
- ⅓ cup mayonnaise or plain Greek yogurt
- 1 tablespoon freshly squeezed lemon juice or vinegar
- 2 teaspoons Dijon mustard
- ½ teaspoon garlic powder
- Sea salt and freshly cracked black pepper, to taste
- Toppings: smoked paprika and chopped fresh chives
Instructions
- Halve the Eggs: Slice boiled eggs in half lengthwise. Gently scoop yolks into a bowl and set whites aside.
- Make the Filling: Mash yolks with a fork until fine. Add mayo, lemon juice, mustard, garlic powder, salt, and pepper. Mix until creamy. Taste and adjust seasoning as needed.
- Assemble the Eggs: Spoon or pipe the yolk mixture into the hollow egg whites. Fill evenly for consistent flavor.
- Garnish and Serve: Sprinkle with paprika and chives for color and taste. Serve immediately or chill for later.
