1 ripe avocado, peeled, pitted, and diced
½ English cucumber, thinly sliced
½ small red onion, peeled and thinly sliced
½ cup pepitas (or substitute with almonds, walnuts, or sunflower seeds)
1 batch tahini ranch dressing
Optional garnish: extra fresh dill or chives, black pepper
