Spicy Baked Chicken Parmesan Ingredients:

4 small boneless skinless chicken breasts (about 2 pounds), pounded to 1/2-inch thickness

Salt and black pepper

1/2 cup flour (all-purpose or whole wheat)

2 eggs, whisked

1 batch crispy panko crust (see below)

Cooking spray

2 cups spicy marinara sauce (see below, or use store-bought)

1 cup shredded mozzarella cheese

1/2 cup thinly-sliced fresh basil leaves

Optional topping: extra red pepper flakes

Crispy Panko Crust Ingredients:

2/3 cup panko breadcrumbs

1/3 cup finely-grated Parmesan cheese

1 teaspoon Italian seasoning

Coarse sea salt and black pepper

Spicy Marinara Sauce Ingredients:

2 tablespoons olive oil

6 garlic cloves, minced

1 (28-ounce) can crushed tomatoes

1/4 to 1/2 teaspoon red pepper flakes (adjust to taste)

1 1/2 teaspoons coarse salt

1/4 teaspoon dried oregano

1/4 teaspoon black pepper

1 sprig fresh basil

Instructions

  1. Prepare the Oven: Preheat oven to 425°F. Line a baking sheet with parchment paper or spray lightly with cooking spray.

  2. Toast the Breadcrumbs: Spread panko on a baking sheet and toast for 3–5 minutes until golden. Combine toasted crumbs with Parmesan, seasoning, salt, and pepper.

  3. Prepare the Chicken: Spread flour on a plate, eggs in a bowl, and the breadcrumb mix on another plate. Season chicken breasts with salt and pepper.

  4. Coat the Chicken: Dredge each chicken breast in flour, dip into eggs, then coat fully with the panko mixture. Place coated chicken on the baking sheet.

  5. Bake the Chicken: Mist with cooking spray and bake for 20 minutes, flipping after 15 minutes for even crisping.

  6. Add Sauce and Cheese: Remove chicken, spread with spicy marinara, and top with mozzarella. Return to oven for 5 minutes until cheese melts.

  7. Finish with Fresh Herbs: Remove from oven, sprinkle with basil, and add red pepper flakes if desired. Serve hot.

To Make the Spicy Marinara Sauce:

  • Heat olive oil in a skillet. Add garlic and sauté until fragrant. Stir in tomatoes, red pepper flakes, salt, oregano, and black pepper. Add the basil sprig and simmer for 15 minutes until thickened. Remove basil and adjust seasoning.
