Stir-Fry Ingredients:

  • 1 batch sesame ginger sauce (see below)
  • 1 pound flank steak, thinly sliced into bite-sized pieces
  • Fine sea salt and freshly cracked black pepper
  • 2 tablespoons avocado oil, divided
  • 1 large white onion, thinly sliced
  • 1 small green cabbage, chopped into bite-sized pieces
  • 4 cloves garlic, thinly sliced
  • 2/3 cup shredded carrots
  • Optional toppings: sliced green onions, toasted sesame seeds

Sesame Ginger Sauce Ingredients:

  • ½ cup low-sodium soy sauce
  • ⅓ cup water
  • 2 tablespoons cornstarch
  • 2 tablespoons maple syrup (or your preferred sweetener)
  • 2 tablespoons rice vinegar
  • 12 teaspoons chili garlic sauce (adjust to taste)
  • 1 teaspoon ground ginger
  • ½ teaspoon toasted sesame oil

Instructions

  1. Prepare the Sauce: Whisk all sesame ginger sauce ingredients in a bowl or shake in a jar until smooth. Set aside.
  2. Cook the Beef: Season beef with salt and pepper. Heat 1 tablespoon oil in a wok over high heat. Add the beef and stir-fry for 4–5 minutes until cooked through. Transfer to a plate.
  3. Cook the Vegetables: Add the remaining oil to the wok. Stir-fry onion for 2 minutes, then add cabbage, garlic, and carrots. Cook for 2–4 minutes, just until the cabbage softens.
  4. Add Beef and Sauce: Return the cooked beef to the pan. Pour in the sesame ginger sauce. Toss everything together for 30 seconds until the sauce thickens and coats the ingredients.
  5. Taste and Adjust: Check seasoning and add more salt, pepper, or chili sauce if needed.
  6. Serve Hot: Remove from heat and serve immediately, garnished with green onions or sesame seeds.
