Ingredients

  • 4 red snapper fillets
  • 1 lb shrimp, peeled and deveined
  • 1 cup grits
  • 2 cups water
  • 1 cup heavy cream (divided)
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp Cajun seasoning
  • 4 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • Salt and pepper, to taste

Instructions

  1. Cook grits with water, cream, and cheese until smooth. Season with salt and pepper.
  2. Season snapper with Cajun seasoning. Sear in hot oil until golden and cooked through.
  3. Cook shrimp in butter until pink; set aside.
  4. Add garlic, broth, and cream to skillet; simmer until sauce thickens.
  5. Plate grits, top with snapper and shrimp, and pour sauce over. Serve hot.
