Meatloaf Cupcakes with Whipped Potato Topping

These savory meatloaf cupcakes are topped with creamy whipped mashed potatoes and baked in a muffin tin for the perfect individual comfort food! Easy, fun, and totally delicious—perfect for dinner, meal prep, or even special occasions.

Ingredients

For the Meatloaf:

1 lb ground beef (or half beef/half pork)

1/2 cup breadcrumbs

1/3 cup milk

1 egg

1/2 small onion, finely chopped

1/4 cup parsley or spinach, finely chopped (optional)

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

For the Mashed Potato Topping:

3 cups mashed potatoes

2 tablespoons butter

1/4 cup heavy cream or milk

Salt & pepper to taste

Optional: shredded cheese or fresh herbs for garnish

Instructions

1. Preheat the Oven
Set your oven to 375°F (190°C). Lightly grease a muffin tin or line with foil cupcake liners for easy cleanup.

2. Mix the Meatloaf Base
In a large bowl, combine all the meatloaf ingredients. Mix gently until just combined—don’t overmix, or the texture can turn dense.

3. Fill the Muffin Tin
Spoon the meat mixture evenly into 8–10 muffin cups. Press down lightly to help them hold their shape while baking.

4. Bake the Cupcakes
Bake for 20–25 minutes, or until the tops are browned and the centers are cooked through (an internal temp of 160°F/71°C is ideal).

5. Prepare the Mashed Potatoes
While the meatloaf is in the oven, whip your mashed potatoes with butter and cream until smooth and fluffy. Season to taste.

6. Top the Cupcakes
Once slightly cooled, pipe or spoon the mashed potatoes on top of each cupcake. A swirl with a star piping tip gives them that “frosted” look.

7. Broil (Optional)
Broil for 1–2 minutes to lightly brown the tops—keep an eye on them so they don’t burn!

8. Serve Warm
Serve warm with your favorite sides. These also reheat beautifully and make great leftovers.

Notes

  • Use ground turkey or chicken for a lighter version.

  • Add a cube of cheese in the center before baking for a melty surprise.

  • These reheat well and can be frozen without the topping.

  • Broil carefully to avoid burning the mashed potatoes.
