McGriddle Muffins

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tbsp sugar
  • 1½ cups buttermilk
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ¼ cup pure maple syrup
  • ¾ cup cooked breakfast sausage, crumbled
  • ¾ cup shredded cheddar cheese
  • Optional: Extra maple syrup drizzle, maple butter, or cream cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
  2. Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl.
  3. In a separate bowl, combine buttermilk, egg, melted butter, and maple syrup.
  4. Stir wet ingredients into dry just until combined. Fold in sausage and cheese.
  5. Fill muffin cups ¾ full and bake 18–22 minutes until golden and a toothpick comes out clean.
  6. Cool in pan 5 minutes, transfer to a wire rack. Serve warm with maple drizzle if desired.

Notes

Store in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat in microwave before serving.
