- 1/2 teaspoon baking powder
- 2 tablespoons granulated sugar
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 tablespoons milk
- 1 tablespoon vegetable oil
- 1 tablespoon sweetened condensed milk (plus 1–2 teaspoons extra for the lava center)
- Pinch of salt
- Optional toppings: powdered sugar or whipped cream
Instructions
- In a microwave-safe mug (10 to 12 oz recommended), combine the flour, baking powder, sugar, lemon zest, and a pinch of salt. Stir well to ensure even distribution.
- Add the lemon juice, milk, vegetable oil, and 1 tablespoon of sweetened condensed milk. Stir until smooth and no lumps remain.
- Drop 1 to 2 teaspoons of extra sweetened condensed milk into the center of the batter. Do not stir.
- Microwave on high for 45 to 55 seconds until the top is set and the cake has risen slightly. It should remain soft in the center.
- Let the mug cake rest for 1 to 2 minutes to allow the lava center to settle and thicken.
- Top with powdered sugar or whipped cream and serve warm.
Notes
Use fresh lemon for best flavor. Adjust cooking time slightly based on your microwave’s wattage. A soft center is ideal—residual heat will finish the cooking.
