  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon sweetened condensed milk (plus 12 teaspoons extra for the lava center)
  • Pinch of salt
  • Optional toppings: powdered sugar or whipped cream

Instructions

  1. In a microwave-safe mug (10 to 12 oz recommended), combine the flour, baking powder, sugar, lemon zest, and a pinch of salt. Stir well to ensure even distribution.
  2. Add the lemon juice, milk, vegetable oil, and 1 tablespoon of sweetened condensed milk. Stir until smooth and no lumps remain.
  3. Drop 1 to 2 teaspoons of extra sweetened condensed milk into the center of the batter. Do not stir.
  4. Microwave on high for 45 to 55 seconds until the top is set and the cake has risen slightly. It should remain soft in the center.
  5. Let the mug cake rest for 1 to 2 minutes to allow the lava center to settle and thicken.
  6. Top with powdered sugar or whipped cream and serve warm.

Notes

Use fresh lemon for best flavor. Adjust cooking time slightly based on your microwave’s wattage. A soft center is ideal—residual heat will finish the cooking.
