Italian Drunken Noodles

A bold Italian-inspired pasta with sausage, peppers, and garlic tossed in a hearty, spiced sauce. Vibrant, rustic, and delicious.

Ingredients

  • 1 tbsp olive oil, divided
  • 1 lb Italian sausage
  • 1 tsp salt
  • Freshly ground black pepper
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup yellow bell pepper, sliced
  • 1/2 cup orange bell pepper, sliced
  • 1/4 cup onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • Optional: splash of red wine or broth, parsley, Parmesan

Instructions

  1. Cook sausage in skillet with olive oil until browned. Remove.
  2. Sauté peppers and onion until tender, add garlic.
  3. Stir in seasoning and red pepper flakes, deglaze pan.
  4. Return sausage, toss with noodles.
  5. Serve hot with parsley and Parmesan.
