Ingredients

- 1 tbsp olive oil, divided
- 1 lb Italian sausage
- 1 tsp salt
- Freshly ground black pepper
- 1/2 cup red bell pepper, sliced
- 1/2 cup yellow bell pepper, sliced
- 1/2 cup orange bell pepper, sliced
- 1/4 cup onion, thinly sliced
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- Optional: splash of red wine or broth, parsley, Parmesan
Instructions
- Cook sausage in skillet with olive oil until browned. Remove.
- Sauté peppers and onion until tender, add garlic.
- Stir in seasoning and red pepper flakes, deglaze pan.
- Return sausage, toss with noodles.
- Serve hot with parsley and Parmesan.
