- 2 cups all-purpose flour
- 1 teaspoon fine sea salt
- 1 large egg + 1 large egg yolk
- ⅓ to ½ cup water
Instructions
- Make the Dough: In a large bowl, whisk together flour and salt. Add the egg, egg yolk, and ¼ cup water. Stir until a dough forms. Add 2–4 tablespoons more water as needed until slightly sticky and well combined.
- Knead the Dough: Transfer to a floured surface and sprinkle lightly with flour. Knead for 1–2 minutes until smooth, soft, and no longer sticky. The dough does not need to be perfectly smooth.
- Roll and Cut: Flour the surface and roll the dough evenly to ¼–⅛ inch thickness. Dust with flour again, then slice into strips about 3 inches long by ½ inch wide. Toss noodles gently with flour to prevent sticking.
- Cook the Noodles: Boil noodles in salted water or broth for 2–3 minutes, depending on thickness, until tender. Drain and serve immediately, or cook directly in your favorite soup or sauce.
