  • 2 cups all-purpose flour
  • 1 teaspoon fine sea salt
  • 1 large egg + 1 large egg yolk
  • to ½ cup water

Instructions

  1. Make the Dough: In a large bowl, whisk together flour and salt. Add the egg, egg yolk, and ¼ cup water. Stir until a dough forms. Add 2–4 tablespoons more water as needed until slightly sticky and well combined.
  2. Knead the Dough: Transfer to a floured surface and sprinkle lightly with flour. Knead for 1–2 minutes until smooth, soft, and no longer sticky. The dough does not need to be perfectly smooth.
  3. Roll and Cut: Flour the surface and roll the dough evenly to ¼–⅛ inch thickness. Dust with flour again, then slice into strips about 3 inches long by ½ inch wide. Toss noodles gently with flour to prevent sticking.
  4. Cook the Noodles: Boil noodles in salted water or broth for 2–3 minutes, depending on thickness, until tender. Drain and serve immediately, or cook directly in your favorite soup or sauce.
