Ingredients
* 2 boneless, skinless chicken breasts
* 1 can (28 oz) crushed tomatoes
* 4 cups chicken broth
* 1 onion, diced
* 3 cloves garlic, minced
* 1 tablespoon Italian seasoning
* 1 cup shredded mozzarella cheese
* ½ cup grated Parmesan cheese
* Fresh basil, for garnish
* Optional: garlic croutons for serving
Instructions
1. Prep the ingredients: dice the onion, mince the garlic, and shred cheese.
2. Place chicken breasts in the Crockpot.
3. Add crushed tomatoes, chicken broth, onion, and garlic.
4. Stir in Italian seasoning, and set the Crockpot to low for 6 hours.
5. After 5 hours, shred the chicken and return to the pot.
6. Stir in mozzarella and Parmesan cheeses until melted.
7. Serve hot, garnished with fresh basil and croutons if desired.
