Muffin Ingredients:

- 1 cup old-fashioned oats

- 2 large eggs
- ½ cup plain Greek yogurt
- ½ cup organic honey

- 1½ cups grated carrot

- 1 cup powdered sugar
- 1 tablespoon honey
- 1–2 tablespoons milk (any type)

Preheat the Oven: Heat oven to 350°F. Line a muffin pan with 12 paper liners or grease lightly. Set aside.

Mix Dry Ingredients: In a large bowl, whisk flour, oats, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

Combine Wet Ingredients: In another bowl, stir eggs, Greek yogurt, honey, oil, vanilla, carrots, and raisins (if using) until evenly mixed.

Make the Batter: Add wet ingredients to the dry bowl. Stir until just combined, avoiding overmixing for the fluffiest texture.

Fill the Muffin Cups: Portion the batter evenly into 12 muffin cups. Smooth tops gently with a spoon if needed.

Bake to Perfection: Bake 18–20 minutes, or until a toothpick inserted in the center comes out clean.

Cool on a Rack: Transfer the pan to a wire rack and cool for 5–10 minutes. Remove muffins to finish cooling.

Optional Icing: Whisk powdered sugar, honey, and milk until smooth. Drizzle over cooled muffins for a sweet glaze.
