Instructions

  1. Preheat the Oven: Heat oven to 350°F. Line a muffin pan with 12 paper liners or grease lightly. Set aside.

  2. Mix Dry Ingredients: In a large bowl, whisk flour, oats, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

  3. Combine Wet Ingredients: In another bowl, stir eggs, Greek yogurt, honey, oil, vanilla, carrots, and raisins (if using) until evenly mixed.

  4. Make the Batter: Add wet ingredients to the dry bowl. Stir until just combined, avoiding overmixing for the fluffiest texture.

  5. Fill the Muffin Cups: Portion the batter evenly into 12 muffin cups. Smooth tops gently with a spoon if needed.
