“Everything” Chicken

4 boneless skinless chicken breasts (pounded to even thickness)

Kosher salt and freshly-cracked black pepper

2 tablespoons melted butter (or olive oil)

1/4 cup “Everything” Seasoning Blend

Optional garnishes: chopped fresh parsley, lemon wedges, or grated Parmesan cheese

Instructions

  • Brine the Chicken: Fill a large bowl with 1 quart warm water and 1/4 cup kosher salt. Stir until mostly dissolved. Submerge chicken breasts and let sit 15 minutes. Rinse under cold water, then pat dry. (Skip if your chicken is pre-brined.)

  • Prepare the Oven: Preheat oven to 425°F. Lightly grease a baking dish or line it with parchment paper.

  • Season the Chicken: Brush each breast evenly with melted butter or oil. Sprinkle about 1 tablespoon of “Everything” Seasoning on each piece. Pat lightly to help it stick.

  • Bake to Perfection: Arrange chicken in a single layer in the baking dish. Bake for 18–20 minutes, or until internal temperature reaches 165°F.
