- 1 cup marinara sauce
- ½ cup mini pepperoni slices or cooked sausage crumbles (optional)
- 1 cup diced bell peppers
- ½ cup sliced mushrooms
- ½ cup black olives, sliced
- 1 ½ cups shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 1 teaspoon dried Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Cook the Quinoa:
In a medium saucepan, combine the rinsed quinoa and broth. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes. When the liquid is fully absorbed and the quinoa is tender, remove from heat. - Fluff and Flavor the Base:
Fluff the quinoa with a fork to loosen the grains. Then, stir in the marinara sauce, Italian seasoning, and red pepper flakes (if using). This creates a flavorful, saucy foundation. - Assemble the Bowls:
Preheat your oven to 400°F (200°C). Spoon the quinoa mixture evenly into four oven-safe bowls or ramekins. Flatten gently with the back of a spoon. - Add the Toppings:
Layer on the diced bell peppers, mushrooms, olives, and pepperoni or sausage if desired. Sprinkle generously with shredded mozzarella, then top with parmesan for extra flavor. - Bake to Melted Perfection:
Place the bowls on a baking sheet and bake in the preheated oven for 10–12 minutes, or until the cheese is melted, golden, and bubbling around the edges. - Garnish and Serve:
Remove from the oven and top each bowl with fresh chopped basil or parsley. Serve hot and enjoy every delicious, cheesy spoonful.
