Marinade Ingredients:
- ¼ cup soy sauce
- ⅓ cup water
- 2 tablespoons rice wine vinegar
- 1 tablespoon cornstarch
- ⅛ teaspoon coarsely ground black pepper
Pepper Steak Ingredients:
- 1 pound flank steak or sirloin, thinly sliced across the grain
- 2 tablespoons olive oil
- 12 mini sweet peppers (or 2 large bell peppers), thinly sliced
- 2 scallions, sliced diagonally (white and green parts separated)
- 2 tablespoons fresh ginger, minced
- 4 garlic cloves, minced
Instructions
- Prepare the Marinade: In a large bowl, whisk soy sauce, water, vinegar, cornstarch, and black pepper until smooth. Add steak slices, toss well, cover, and refrigerate for at least 15 minutes.
- Cook the Vegetables: Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add peppers, white scallion pieces, ginger, and garlic. Stir-fry for 3 minutes until softened. Transfer to a plate.
- Cook the Steak: Add the remaining tablespoon of oil to the pan. Remove half the steak from marinade, shake off excess, and stir-fry for 2–3 minutes until browned. Transfer steak to the plate with vegetables. Repeat with remaining steak.
- Thicken the Sauce: Pour reserved marinade into the skillet. Cook for 1 minute, stirring until slightly thickened.
- Combine and Finish: Return steak, vegetables, and green scallion tops to the skillet. Toss everything together and cook for 1–2 more minutes until heated through.
- Serve: Transfer Easy Pepper Steak to plates or bowls and serve hot over rice, quinoa, or noodles.
