Marinade Ingredients:

  • ¼ cup soy sauce
  • ⅓ cup water
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon cornstarch
  • ⅛ teaspoon coarsely ground black pepper

Pepper Steak Ingredients:

  • 1 pound flank steak or sirloin, thinly sliced across the grain
  • 2 tablespoons olive oil
  • 12 mini sweet peppers (or 2 large bell peppers), thinly sliced
  • 2 scallions, sliced diagonally (white and green parts separated)
  • 2 tablespoons fresh ginger, minced
  • 4 garlic cloves, minced

Instructions

  1. Prepare the Marinade: In a large bowl, whisk soy sauce, water, vinegar, cornstarch, and black pepper until smooth. Add steak slices, toss well, cover, and refrigerate for at least 15 minutes.
  2. Cook the Vegetables: Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add peppers, white scallion pieces, ginger, and garlic. Stir-fry for 3 minutes until softened. Transfer to a plate.
  3. Cook the Steak: Add the remaining tablespoon of oil to the pan. Remove half the steak from marinade, shake off excess, and stir-fry for 2–3 minutes until browned. Transfer steak to the plate with vegetables. Repeat with remaining steak.
  4. Thicken the Sauce: Pour reserved marinade into the skillet. Cook for 1 minute, stirring until slightly thickened.
  5. Combine and Finish: Return steak, vegetables, and green scallion tops to the skillet. Toss everything together and cook for 1–2 more minutes until heated through.
  6. Serve: Transfer Easy Pepper Steak to plates or bowls and serve hot over rice, quinoa, or noodles.
