Crockpot Loaded Steak & Potato Bake

A hearty crockpot meal of tender beef, potatoes, onions, and a creamy mushroom sauce finished with cheddar and sour cream. Pure comfort food made easy.

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 lbs small red potatoes, quartered
  • 1 large onion, chopped
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt & black pepper, to taste

Instructions

  1. Place potatoes and onions in crockpot, top with beef.
  2. Whisk mushroom soup, broth, thyme, garlic powder, salt, and pepper. Pour over beef and potatoes.
  3. Cook on low 6–8 hours or high 3–4 hours.
  4. Stir in sour cream and cheddar in last 30 minutes.
  5. Serve hot with green beans or salad.
