- 1.5 lbs beef stew meat, cubed
- 2 lbs small red potatoes, quartered
- 1 large onion, chopped
- 1 can (10.75 oz) condensed cream of mushroom soup
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- Salt & black pepper, to taste
Instructions
- Place potatoes and onions in crockpot, top with beef.
- Whisk mushroom soup, broth, thyme, garlic powder, salt, and pepper. Pour over beef and potatoes.
- Cook on low 6–8 hours or high 3–4 hours.
- Stir in sour cream and cheddar in last 30 minutes.
- Serve hot with green beans or salad.
