Ingredients
Fresh Strawberries – 1 cup, diced Unsalted Butter – 1/2 cup or 115g Granulated Sugar – 1/2 cup or 100g Brown Sugar – 1/4 cup or 50g Egg – 1 large All-Purpose Flour – 1 1/2 cups or 190g Baking Powder – 1 tsp Baking Soda – 1/2 tsp Vanilla Extract – 1 tsp Semi-Sweet Chocolate – 1 cup or 175g, melted Strawberry Extract – 1/2 tsp, optional
Instructions
Dice 1 cup of fresh strawberries, making sure they are not overripe for the best texture.
Cream together 1/2 cup unsalted butter, 1/2 cup granulated sugar, and 1/4 cup brown sugar until light and fluffy.
Add 1 large egg and 1 tsp vanilla extract to the butter mixture, beating well to combine.
In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 tsp baking powder, and 1/2 tsp baking soda.
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Gently fold in the diced strawberries and 1/2 tsp strawberry extract (optional) to enhance the strawberry flavor.
Scoop dough onto a baking sheet lined with parchment paper.
Bake at 350°F (175°C) for 10-12 minutes or until the edges are golden.
While the cookies are baking, melt 1 cup of semi-sweet chocolate.
Once cookies are cooled, dip each cookie halfway into the melted chocolate.
Let the chocolate set before serving or storing.
Notes
Strawberry Extract: Optional, but it enhances the strawberry flavor in the dough for a more intense taste.
Butter Temperature: Make sure the butter is softened at room temperature for easier creaming with the sugars.
Baking Time: Keep an eye on the cookies towards the end of the baking time to avoid overbaking. The edges should be golden but the center soft.
Chocolate Coating: For a thicker chocolate layer, you can dip the cookies again after the first coating sets.
Storage: Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Customizing: Add a handful of chopped nuts or drizzle with white chocolate for extra flavor and texture.
