  • ½ teaspoon freshly-ground black pepper
  • ½ teaspoon smoked paprika
  • 2 tablespoons olive oil
  • ⅔ cup chimichurri sauce (plus extra for serving)

Instructions

  1. Season the Steak: Pat steak cubes dry with paper towels. Season evenly with salt, pepper, and smoked paprika.
  2. Heat the Skillet: Add olive oil to a large cast iron or nonstick skillet over medium-high heat until shimmering.
  3. Cook the Steak Bites: Place steak cubes in a single layer. Cook undisturbed until seared and golden, about 2–3 minutes. Flip and sear the other side until cooked to your liking. Work in two batches if needed.
  4. Add Chimichurri: Remove the skillet from heat. Drizzle ½ cup chimichurri over the steak bites and toss to coat evenly.
  5. Serve Immediately: Transfer to a serving dish and drizzle with extra chimichurri. Garnish with fresh herbs if desired.
