- 2 pounds steak (flank, ribeye, or sirloin), cut into 1-inch cubes
- 1 teaspoon fine sea salt
- ½ teaspoon freshly-ground black pepper
- ½ teaspoon smoked paprika
- 2 tablespoons olive oil
- ⅔ cup chimichurri sauce (plus extra for serving)
Instructions
- Season the Steak: Pat steak cubes dry with paper towels. Season evenly with salt, pepper, and smoked paprika.
- Heat the Skillet: Add olive oil to a large cast iron or nonstick skillet over medium-high heat until shimmering.
- Cook the Steak Bites: Place steak cubes in a single layer. Cook undisturbed until seared and golden, about 2–3 minutes. Flip and sear the other side until cooked to your liking. Work in two batches if needed.
- Add Chimichurri: Remove the skillet from heat. Drizzle ½ cup chimichurri over the steak bites and toss to coat evenly.
- Serve Immediately: Transfer to a serving dish and drizzle with extra chimichurri. Garnish with fresh herbs if desired.
