- 2 tablespoons olive oil
- 1 ½ lbs boneless, skinless chicken breast (thinly sliced)
- 1 large onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 cup shredded mozzarella or provolone cheese
- 4 sub rolls, sliced open
Instructions
- Cook the Chicken – Heat olive oil in a skillet over medium heat. Season chicken with paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook 6–8 minutes until golden and cooked through.
- Add Vegetables – Stir in sliced onion and bell peppers. Cook 5–7 minutes until softened and caramelized.
- Melt the Cheese – Sprinkle shredded cheese over chicken and veggies, cover with a lid, and let melt.
- Toast the Rolls – Lightly toast the sub rolls until golden and slightly crisp.
- Assemble and Serve – Fill rolls with the cheesy chicken mixture and serve hot.
Notes
- Add jalapeños for spice or mushrooms for extra flavor.
- Swap in chipotle mayo or ranch for a creamy kick.
