Ingredients
1.5 pounds boneless skinless chicken breasts, cut into bite-sized pieces
5 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon freshly-cracked black pepper
Juice of 1 large fresh lemon
For serving: pita bread, baby arugula or romaine, thinly-sliced red onions, cherry tomatoes, crumbled feta, parsley, tzatziki sauce
Instructions

Marinate the Chicken: In a large bowl or zip-top bag, combine chicken, garlic, olive oil, oregano, salt, pepper, and lemon juice. Toss until coated evenly. Cover and refrigerate for at least 30 minutes or up to 24 hours.

Prepare Skewers: Remove chicken from the marinade, discarding excess liquid. Thread chicken onto skewers, leaving a little space between pieces.

Cook on the Grill: Preheat grill to medium-high. Place skewers on the grill and cook 6–8 minutes, turning once, until cooked through and golden brown.

Cook in the Oven: Preheat broiler to high. Position oven rack about 5–6 inches from heat. Place skewers on a baking sheet and broil 6–8 minutes, turning once, until chicken is fully cooked.

Assemble the Souvlaki: Place pita bread on a flat surface. Fill with chicken pieces, greens, red onions, tomatoes, feta, parsley, and tzatziki. Serve immediately.
