Chicken Souvlaki

Ingredients

1.5 pounds boneless skinless chicken breasts, cut into bite-sized pieces

5 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon dried oregano

1 teaspoon kosher salt

1/2 teaspoon freshly-cracked black pepper

Juice of 1 large fresh lemon

For serving: pita bread, baby arugula or romaine, thinly-sliced red onions, cherry tomatoes, crumbled feta, parsley, tzatziki sauce

Instructions

  • Marinate the Chicken: In a large bowl or zip-top bag, combine chicken, garlic, olive oil, oregano, salt, pepper, and lemon juice. Toss until coated evenly. Cover and refrigerate for at least 30 minutes or up to 24 hours.

  • Prepare Skewers: Remove chicken from the marinade, discarding excess liquid. Thread chicken onto skewers, leaving a little space between pieces.

  • Cook on the Grill: Preheat grill to medium-high. Place skewers on the grill and cook 6–8 minutes, turning once, until cooked through and golden brown.

  • Cook in the Oven: Preheat broiler to high. Position oven rack about 5–6 inches from heat. Place skewers on a baking sheet and broil 6–8 minutes, turning once, until chicken is fully cooked.

  • Assemble the Souvlaki: Place pita bread on a flat surface. Fill with chicken pieces, greens, red onions, tomatoes, feta, parsley, and tzatziki. Serve immediately.
