Ingredients
Stir-Fry Ingredients:
2 tablespoons olive oil, divided
2 boneless skinless chicken breasts, cut into bite-sized pieces
Salt and black pepper, to taste
1 batch Stir-Fry Sauce (see below)
1 bunch broccoli, chopped into small florets
1 teaspoon toasted sesame oil
Toppings: sliced green onions, toasted sesame seeds
Stir-Fry Sauce Ingredients:
⅔ cup water
⅓ cup reduced-sodium soy sauce
3 tablespoons rice vinegar
2 tablespoons cornstarch
2 tablespoons honey
2 cloves garlic, peeled and minced
1 teaspoon ground ginger

Cook the Chicken: Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add chicken, season with salt and pepper, and stir-fry for 5 minutes until browned and nearly cooked through.

Prepare the Sauce: While the chicken cooks, whisk together water, soy sauce, rice vinegar, cornstarch, honey, garlic, and ginger until smooth.

Add Broccoli: Stir in the remaining olive oil and broccoli florets with the chicken. Cook for 3 minutes until broccoli is bright green and crisp-tender.

Add Sauce: Pour the prepared sauce into the pan. Stir continuously for 1 minute until thickened and glossy.

Finish and Serve: Remove from heat, stir in sesame oil, and garnish with green onions and sesame seeds. Serve immediately.
