  • 1 cup mashed ripe bananas (about 2 large bananas)
  • ½ cup maple syrup
  • ½ cup plain milk (oat, almond, or dairy)
  • 2 tablespoons avocado oil (or any neutral oil)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (240g) oat flour
  • 1 tablespoon pumpkin pie spice
  • 1½ teaspoons baking soda
  • ¾ teaspoon fine sea salt

Instructions

  1. Prepare the Oven and Pan: Preheat to 375°F. Line a 12-cup muffin pan with paper liners.

  2. Blend the Base: Place spinach, bananas, maple syrup, milk, oil, and vanilla in a blender. Blend until smooth.

  3. Add Dry Ingredients: Add oat flour, pumpkin pie spice, baking soda, and sea salt. Pulse until just combined, scraping sides if needed.

  4. Fill Muffin Cups: Pour batter evenly into the prepared muffin tin. Each cup should be nearly full.

  5. Bake to Perfection: Bake for 14–17 minutes, or until a toothpick inserted in the center comes out clean.

  6. Cool and Serve: Transfer the pan to a wire rack. Cool for at least 10 minutes before serving warm.
