Black Bean and Avocado Breakfast Burritos

Breakfast Burrito Ingredients

2 small tortillas

4 eggs, scrambled

1 avocado, diced or sliced

¼ cup shredded cheddar cheese

1 batch seasoned black beans (recipe below)

Salsa (optional)

Black Beans Ingredients

2 teaspoons olive oil

¼ cup chopped red onion

¼ cup diced red bell pepper (optional)

1 clove garlic, minced

1 (15 oz.) can black beans, drained

½ teaspoon chili powder

½ teaspoon oregano

¼ teaspoon cumin

¼ cup chopped fresh cilantro

Juice of half a lime

Salt and pepper, to taste

Instructions

  • Prepare the Beans: Heat olive oil in a saucepan over medium heat. Add onion and bell pepper, cooking for 5 minutes until soft. Stir in garlic and cook for 1 more minute. Add black beans, chili powder, oregano, and cumin. Stir to combine. Bring to a simmer, reduce heat, and cook for 5 minutes. Remove from heat, then stir in cilantro and lime juice. Season with salt and pepper.

  • Scramble the Eggs: In a skillet, scramble the eggs until soft and fluffy. Remove from heat.

  • Warm the Tortillas: Heat tortillas in a dry skillet for 30 seconds per side until warm and flexible.

  • Assemble the Burritos: Place tortillas flat on a serving dish. Layer scrambled eggs, cheese, avocado, and seasoned black beans down the center. Add salsa if using.

 

  • Roll and Serve: Fold the sides inward, roll tightly, and place seam-side down. Serve warm and enjoy.
