3 cups cooked quinoa
2 cups shredded Colby Jack cheese, divided
2 cups shredded cooked chicken
1 (15-ounce) can black beans, rinsed and drained
1 cup whole-kernel corn (canned or thawed frozen)
1 ¼ cups barbecue sauce, plus extra for drizzling
Optional garnishes: chopped cilantro, diced avocado, finely-chopped green or red onions, sour cream

Preheat the Oven: Set oven to 375°F so it’s ready when your casserole is assembled.

Mix the Ingredients: In a large bowl, stir together cooked quinoa, 1 ½ cups cheese, chicken, black beans, corn, and barbecue sauce. Mix until evenly combined.

Transfer to Baking Dish: Pour mixture into a large baking dish and spread evenly. Sprinkle remaining ½ cup of cheese over the top.

Bake Until Melted: Place dish in oven and bake for 15–20 minutes until cheese melts and casserole is heated through.
